Can I change text that's already in the PDF?

Not directly — a PDF stores positioned glyphs rather than editable paragraphs, so there is no text box to click into. You can cover the old text with a white box and type new text on top, which is how most PDF editors handle small corrections.

Will my additions be part of the file, or just annotations?

They are drawn into the page content itself, so they show up everywhere the PDF is opened or printed — not as comments a viewer might hide.
